Yellowfin sea bream is a wild fish with a slender, silvery body and fine, tender flesh. It comes gutted and cleaned, so it goes straight from the pack to the steamer or pan with very little preparation. The bones are few and fine, and the flavour is mild and sweet, closer to clean ocean than to oily fish. Steam it whole with ginger and spring onion, pan-fry it until the skin turns crisp, or braise it in a light soy sauce. It is a good fish for a shared family table.
